I Can't Believe Its Not Bacon

I may be vegan now, but I like meat. I can easily say that bacon is at the top of my list of foods that I miss. Luckily, I have come up with a suitable replacement for my breakfast BLTs. I use this recipe on just about anything now- broccoli or potato salads, green salads, baked beans, chili, split pea soup, pizza, baked potatoes, veggie burgers, and even as is as a tasty munchie!

I Can't Believe Its Not Bacon
· 2 Tbs Black Bean Chili Sauce
· 2 Tbs Fresh-squeezed Lemon Juice
· 2 Tbs Teryaki Sauce (Or 2 Tbs Soy Sauce and 1-2 Tbs. of sugar)
· 1 Tbs nutritional yeast 
· 1/4 tspn. Liquid smoke
· 1 package of Extra Firm Tofu (For those of you who do not usually buy tofu, you can usually find it in the produce section of your grocery store tucked away in a corner. The brand that I personally stick with is Organic Nasoya Tofu.)

I first preheated my oven on convection at 400F. Slice the tofu before you press it. My slices were a little less than 1/4" thick and it gave me 22 slices. Line a baking sheet with a dish towel and place the tofu slices onto the sheet. Cover with a second dish towel. Place a second baking sheet on top of the towel-wrapped tofu and place something heavy on it (I usually use the giant container of corn oil or some canned vegetables). Leave this for at least an hour.

Mix all of the sauce ingredients together in a small bowl, while the tofu is being "pressed". Unwrap your tofu slices and line them up on one of the baking sheets (I usually put a piece of parchment paper or a non-stick baking mat on the baking sheet for easy clean up). Brush the marinade onto both sides of the tofu slices and let sit for 10-15 minutes. Bake the slices for 10 minutes. Flip them over and then bake for another 10 minutes. I then check them. The edges should be darkened by not burnt. I turn the oven off and open the oven for a few seconds to let some of the heat out. Then I leave the slices in for 5-10 more minutes. (It makes the slices a little bit chewier). Eat them right away or throw them in the fridge!

The Beginnings

Hello bloggers and friends!

I started my vegan adventures in August of 2011 in an effort to ward off the hereditary-prone cardiovascular diseases. Going cold turkey, I have since eaten one piece of meat and regretted it. I have never felt better.

Through my experiences thus far, I have found that there are never enough "tried and true" vegan recipes out there (especially ones that seem feasible to the average day person!). I am no chef. I will create duds and I will post them, in the hopes that everyone else can learn from my adventures as well. That all said, the recipes that I will post are not just for vegans. I highly encourage vegetarians and omnivores a like to dip into the world of veganism with an open mind and a healthy appetite.
